What are the main coconut oils used in Kerala kitchens?
Three styles cover most Kerala cooking: cold-pressed oil, virgin coconut oil and kachiya enna, of which we sell the first two. In Malayalam, coconut oil is velichenna (our product pages also list thengaenna), and the three differ in how the oil is separated, not in the coconut [2][4].

What do the labels cold-pressed and virgin actually mean?
They are defined in the Codex Standard for Named Vegetable Oils. Cold pressed oils are obtained, without altering the oil, by mechanical procedures only, such as expelling or pressing, without the application of heat. Virgin oils are obtained by mechanical procedures and the application of heat only, and may be purified only by washing with water, settling, filtering and centrifuging [1].
So "virgin" does not guarantee "no heat", while "cold pressed" does. Kachiya enna is a different, traditional method: a 2025 Onmanorama feature describes it as "not your usual cold-pressed, no-heat deal", made by heating coconut milk or grated coconut until it is reduced to oil [2]. Which coconut oil should I use for which Kerala dish?
Use the oil whose aroma you want in the dish. These are our suggestions from how we describe each oil, not rules.
- Everyday curries, thoran, avial, fish curry and tempering mustard seeds and curry leaves: Cold Pressed Coconut Oil. Our page lists medium-heat frying, tempering and Kerala dishes finished with a spoon of raw oil.
- Light sauteing, raw finishing and uncooked use: Cold Pressed Virgin Coconut Oil, which our page describes as paler and milder.
- A bold, roasted flavour in curries and stir-fries: kachiya enna (urukku velichenna). Onmanorama describes it that way and calls it a traditional oil [2]. We do not sell it online at present, so this guide treats it as background.

How do I check coconut oil for other oils at home?
Use the refrigerator test from FSSAI's DART booklet [3]. It works because coconut oil solidifies when chilled.
- Pour some coconut oil into a clear glass.
- Place the glass in the refrigerator for 30 minutes. Do not use the freezer [3].
- Take it out and look. Coconut oil solidifies; if it is adulterated, other oils remain as a separate liquid layer [3].
Kachiya enna and virgin coconut oil are still coconut oil, so they should also set when chilled, though DART's test names coconut oil generally and does not discuss these styles. A thin liquid layer on top of a set oil is the sign to watch for.
What did our own lab test show?
Our lab reports page links to a coconut oil report from Geo-Chem Laboratories, dated 19 June 2024, for a sample described only as "Coconut Oil" submitted by The Miller. The report lists mineral oil as absent, argemone as negative and added colouring matter as absent. Its Polenske value is 13.24, inside the 13 to 18 range the Codex standard lists for coconut oil [1][4].
The report does not say which of our three oils was sampled, so we treat it as evidence about our coconut oil in general and not about one batch of one product.
What are the limits of this advice?
- The fridge test finds other oils mixed in. It does not tell you how the oil was made, so a label is a claim, not proof.
- Whether an oil is better for you is a nutrition question we have not covered or sourced here, and nothing in this guide is medical advice.
