Cold Pressed Mustard Oil — Kachi Ghani, Pungent and Unrefined
Cold pressed mustard oil — kachi ghani — crushed from whole mustard seed without heat. The sharpness that hits the back of your nose is allyl isothiocyanate, released when the seed is crushed, and it is the whole point of the oil. Refining removes it; cold pressing keeps it.
How we make it
Whole mustard seed is cleaned and crushed in a slow press, which is precisely what kachi ghani means — raw grinding, no roasting, no heat. The oil is rested and cloth-filtered. Nothing is bleached or deodorised, so the pungency and the dark amber colour both stay.

One ingredient: mustard seed. No refined oil blended in, no argemone contamination — this is the classic adulterant in cheap mustard oil and a genuine health hazard, which is why our batches are tested and the reports published on the site.

How to store it
Cool, dark and capped. Mustard oil is relatively stable and keeps six months or more. The pungency softens slowly over time, which is normal. Heat it until it just shimmers before use if you want the raw sharpness to mellow.

What does kachi ghani actually mean?
Raw grinding. The seed is crushed cold, without roasting or added heat, in a slow press. It is the traditional term for exactly what cold pressing describes, and it is why the oil keeps its pungency and colour.
Why does mustard oil sting the nose?
Crushing mustard seed releases allyl isothiocyanate, the compound responsible for that sharpness. It is the marker of a genuinely cold pressed mustard oil. Refined mustard oil has had it stripped out and smells of very little.
What is argemone adulteration and do you test for it?
Argemone mexicana seed resembles mustard seed and has been used to bulk cheap mustard oil; it is toxic. We test batches for it and publish the reports. Buying pressed-to-order oil from whole seed you can see is the simplest protection.
Should I heat mustard oil to smoking before cooking?
Heating until it just shimmers mellows the raw pungency and is traditional in many recipes. Heating to actual smoking is unnecessary and degrades the oil. Warm it, do not burn it.
Why is your mustard oil darker and sharper than the bottle I buy in a supermarket?
Most supermarket mustard oil is refined, bleached and deodorised, which removes both the colour and the bite. Ours is neither. If it tastes stronger than you are used to, that is the unrefined oil, not a fault.
Why does Cold Pressed Mustard Oil foam when it is heated?
Because there is no anti-foaming agent in it. Refined oils have silicone-based additives that stop this; unrefined oil does not, so it froths, particularly in humid weather. It is a sign of what is absent. If it bothers you, drop a small ball of tamarind into the hot oil for a minute and the foam settles.
Does Cold Pressed Mustard Oil contain trans fats or cholesterol?
No hydrogenation is used, so there is no industrially produced trans fat, and no plant oil contains cholesterol. Those two things are true of any genuinely unrefined, mechanically pressed oil, ours included.
Is Cold Pressed Mustard Oil filtered, and why is it sometimes cloudy?
It is filtered through cloth only, never through bleaching clay. That leaves fine particles of the seed or kernel behind, so the oil can look cloudy and drop a little sediment. Perfectly clear oil has usually been through a refining step.
What makes Cold Pressed Mustard Oil from Miller Stores different?
