Cold Pressed Sesame Oil — Nallennai, Wood Pressed
Cold pressed sesame oil — nallennai in Tamil, gingelly oil in English — crushed from cleaned whole sesame seed in a wooden press. Deep amber, strongly nutty, and stable enough to be the traditional pickling and frying oil across South India long before refined oils existed.
How we make it
Sesame seed is cleaned and stone-sorted, then pressed cold in a wooden chekku. Sesame is unusual: it contains sesamol and sesamin, natural antioxidants that make the unrefined oil keep far better than most. That is why traditional pickles are sealed under a layer of it. We filter through cloth and bottle; nothing is bleached or deodorised.
What goes in, what stays out
One ingredient: sesame seed. No refined oil blend, no synthetic antioxidant, no colour. Note that some products labelled 'gingelly oil' are refined sesame blended with cheaper oils — ours is single-seed and cold pressed, and the aroma makes that obvious.
How to use it
- Pickling — the traditional oil for avakaya and Tamil oorugai, because it preserves
- Tempering for Andhra and Tamil cooking
- Deep frying, where it is more heat-stable than most unrefined oils

How to store it
Cool, dark cupboard, tightly capped. Sesame oil keeps longer than other unrefined oils thanks to its own antioxidants — comfortably six to nine months. No refrigeration needed.

Frequently asked questions
Is gingelly oil the same as sesame oil, and is it the same as toasted sesame oil?
Gingelly, til and nallennai all mean plain sesame oil, which is what this is. Toasted sesame oil is a different product — the seed is roasted dark before pressing, giving the intense oil used in East Asian cooking. Do not substitute one for the other.
Why is sesame oil the traditional oil for pickles?
Sesame contains sesamol and sesamin, natural antioxidants that slow rancidity, so a pickle sealed under it keeps for months without refrigeration. It is a preservative and a flavour at the same time.
How long does cold pressed sesame oil last?
Longer than most unrefined oils — six to nine months in a cool dark cupboard, because of those natural antioxidants. It still has no synthetic preservative, so buy a size you will finish.
Can I use it for deep frying?
Yes. Unrefined sesame is among the more heat-stable cold pressed oils and is traditionally used for frying across Tamil Nadu and Andhra. Keep it below smoking point and do not reuse repeatedly.
Why is your sesame oil darker than the one I usually buy?
Unrefined sesame oil is naturally amber. Pale, near-colourless sesame oil has been bleached during refining. Colour here is a sign of what was not done to it.
