Little Millet — Saamai, Unpolished Siridhanya
Little millet, saamai in Tamil and sama in Telugu, sold unpolished with the bran left on. It is one of the five siridhanya millets and the one most people find easiest to start with, because it behaves very much like rice in the pot and does not need learning.
How we make it
The grain is cleaned, de-stoned and hulled only — the inedible husk comes off, the bran stays on. Polishing is a separate step that abrades the bran away to make the grain whiter and cook faster, and it takes most of the fibre and minerals with it. We do not polish.
What goes in, what stays out
One ingredient: little millet. No polishing, no glazing, no talc or mineral polish of the kind used to make rice and millets look bright, no broken grain bulked in.

How to store it
Airtight and dry. Unpolished millets hold their bran oil, so they keep about four to six months rather than indefinitely. If you buy in quantity, keep the working amount out and refrigerate the rest.

Frequently asked questions
What are siridhanya millets, and which should a beginner start with?
Siridhanya refers to the five positive millets - foxtail, little, kodo, barnyard and browntop - eaten unpolished. Little millet is the usual starting point because it cooks and tastes closest to rice, so nothing about your cooking has to change.
Do millets need soaking, and for how long?
Unpolished millets cook better soaked for six to eight hours, or at minimum thirty minutes. Soaking softens the bran, shortens cooking and makes them easier to digest. Discard the soaking water and rinse before cooking.
What is the difference between polished and unpolished millet?
Polishing abrades the bran off to make the grain whiter and quicker to cook. It also removes most of the fibre and a good part of the minerals. Unpolished millet looks duller and takes slightly longer, which is the trade.
How do I cook little millet?
Like rice, with a little more water - roughly one part millet to two and a half parts water - for about fifteen minutes after soaking. It should be fluffy, not sticky.
Why does unpolished millet not keep as long as rice?
The bran carries oil, and that oil eventually oxidises, exactly as with wholegrain flour. Four to six months is realistic; polished grain keeps longer precisely because the bran is gone.
Is Little Millet gluten free?
Millets are naturally gluten free. They are cleaned and hulled on equipment also used for other grains, so tell us if you need a coeliac-safe run.
Can I sprout Little Millet?
Yes. Soak overnight, drain, and keep damp in a covered container for a day or so until small shoots appear. Sprouted millet cooks faster and many people find it easier to digest.
What makes Little Millet from Miller Stores different?
