Millet Dosa Mix — Rice-Free, Ground from Whole Millets

A dosa mix ground from whole unpolished millets and dal, with no rice and no maida in it. Add water, rest the batter about thirty minutes, and cook — there is no overnight fermentation to plan around, which is the point of it on a weekday morning.

How we make it

Millets and dal are cleaned, lightly roasted and stone-milled together to a dosa-appropriate grind — fine enough to spread, coarse enough to crisp. Getting that texture right is most of the work; too fine and the dosa turns leathery, too coarse and it will not spread thin.

What goes in, what stays out

Whole millets, dal and salt. No rice, no maida, no baking soda or eno, no preservative, no emulsifier, no anti-caking agent. Anything that makes an instant mix behave like fermented batter usually comes from one of those, and we would rather it took thirty minutes.

How to use it

  • Weekday dosas without overnight planning
  • Uttapam, with onion and chilli pressed in
  • Paniyaram and appe
  • A thinner batter for millet adai
  • Toddler and school breakfasts

How to store it

Airtight, cool and dry, and use within two to three months. Once mixed with water, keep the batter refrigerated and finish it within two days — it will sour gently, which some people prefer.

Frequently asked questions

Is your millet dosa mix free of rice and maida?

Yes. It is ground from whole unpolished millets and dal only, with salt. There is no rice, no maida, no soda and no preservative in it.

Do I need to ferment the batter overnight?

No. Mix with water and rest it about thirty minutes, and it is ready. If you do leave it longer, or overnight in a warm kitchen, it ferments gently and the dosas take on a mild sourness that many people prefer.

How much water should I add?

Start with roughly two parts water to one part mix by volume and adjust - the batter should coat the back of a spoon and pour easily. Millet batters thicken as they rest, so loosen with a splash before the second round.

Why do my millet dosas stick to the pan?

Millet batter has no rice starch to help release, so the pan matters more. Heat it properly, wipe with oil, and let the first dosa sacrifice itself to season the surface. A well-seasoned iron tawa works better than non-stick here.

Can I get a custom millet blend milled instead?

Yes. If you want a specific ratio, or a particular millet left out, we will mill it to your blend at the counter.

Does Millet Dosa Mix contain maida or refined sugar?

No refined flour and no refined sugar. Ask at the counter for the exact composition of the current batch if you need it for a specific dietary reason.

Is Millet Dosa Mix mild enough for children?

It is blended to a moderate level that most households use as it comes. For small children, make it up with extra water or milk to dilute the spice, or ask us to blend a milder batch.

Can I add vegetables to Millet Dosa Mix?

Yes, and most people do. Add chopped vegetables at the sauté stage before the liquid goes in, and allow a couple of extra minutes of cooking.

What makes Millet Dosa Mix different from a supermarket instant mix?

The spice in it is ground in small batches rather than produced months ahead, and there is no preservative, no MSG and no artificial flavour. That gives it a shorter shelf life than a supermarket packet and a noticeably stronger smell when you open it.
