Ceylon Cinnamon — True Cinnamon, Not Cassia

Ceylon cinnamon, the true cinnamon, sold as soft multi-layered quills that crumble between your fingers. Most of what is sold as cinnamon in India is cassia — a different, harder, blunter bark. Once you have had both side by side the difference is not subtle.

How we make it

The inner bark of the Cinnamomum verum tree is peeled by hand, the outer layer scraped away, and the thin sheets rolled inside one another into a quill and dried. Cassia, by contrast, is a single thick curl of coarse bark. The hand-peeling is why Ceylon cinnamon costs several times what cassia costs.

What goes in, what stays out

One ingredient: Ceylon cinnamon bark. Not cassia, and not a blend of the two — which is the usual substitution, since cassia is far cheaper and superficially similar in a ground powder.

How to use it

  • Desserts and bakes, where its delicate sweetness suits
  • Biryani and pulao, used whole
  • Masala chai and spiced coffee
  • Garam masala, freshly ground
  • Anywhere a recipe specifies true or Ceylon cinnamon

How to store it

Whole quills in an airtight jar away from light keep well over a year. Ground cinnamon fades within a few months. Keep it away from steam.

Frequently asked questions

What is the difference between Ceylon cinnamon and cassia, and does it matter?

Ceylon cinnamon is thin, soft, layered bark with a delicate sweet aroma. Cassia is a thick, hard single curl, darker and much blunter. Cassia is also far higher in coumarin, which is why some countries advise limiting it. For everyday use the flavour difference alone is reason enough.

How do I tell them apart by looking?

Ceylon quills are made of many thin layers rolled together, like a cigar, and crumble easily by hand. Cassia is one thick curl of bark that you cannot break with your fingers. In powder form you cannot tell, which is the argument for buying it whole.

Why is Ceylon cinnamon so much more expensive?

The inner bark has to be peeled and scraped by hand, then rolled and dried. Cassia bark is simply stripped and dried. The labour difference is most of the price difference.

Is cassia harmful?

In ordinary culinary amounts it is widely eaten without issue, but it contains substantially more coumarin than Ceylon cinnamon, and several food authorities suggest moderating regular high intake. If you use cinnamon daily, Ceylon is the safer habit.

Can I substitute one for the other in a recipe?

By weight, roughly, but the result differs. Cassia is stronger and more pungent, Ceylon more delicate and sweet. Recipes from Sri Lanka, Europe and Mexico usually assume Ceylon; most Indian recipes as written assume cassia.

How much longer does whole Ceylon Cinnamon keep than the ground version?

Roughly four times as long. Whole spice holds its aroma for a year or more because the oils stay sealed inside; once ground, the same spice is noticeably flatter within a few weeks.

Can I toast Ceylon Cinnamon before grinding, and does that change how long it keeps?

Toasting deepens the flavour and is worth doing just before you grind. It does shorten the life of the spice though, so toast only what you are about to use rather than a whole batch.

What makes Ceylon Cinnamon from Miller Stores different?

We buy whole and sell whole, cleaned and sorted, with nothing added - no oil polish to make it glossy, no colour, no bulking material. And we will grind it for you at the counter, so the spice stays whole until the moment you actually need it ground.
