Kerala Chutney Powder — Chammanthi Podi, Ground to Order
Chammanthi podi — Kerala dry chutney powder — ground to order from roasted coconut, dried chilli, shallot, curry leaf and tamarind. It is the thing a Malayali household reaches for when there is rice and nothing else, and the coconut in it is precisely why it must be fresh.
How we make it
Grated coconut is dry-roasted slowly until it turns deep brown and smells nutty, and that roasting is the whole craft — under-roast and the podi spoils quickly, over-roast and it turns bitter. Chilli, shallot and curry leaf are roasted alongside, then everything is ground coarse. It is deliberately not milled to a fine flour; chammanthi podi should have texture.
What goes in, what stays out
Roasted coconut, dried red chilli, shallot, curry leaf, tamarind and salt. No preservative, no added oil, no colour, no starch. Because it contains coconut oil naturally, it is made in small batches rather than stored.
How to use it
- Mixed into hot rice with a spoon of coconut oil
- Alongside kanji, the classic pairing
- With idli, dosa and puttu
- As a stuffing for dosa or spread in sandwiches
- Sprinkled over steamed tapioca
How to store it
Airtight, cool and completely dry. Because of the coconut, this is the shortest-lived thing we mill — use within four to six weeks. Never use a wet spoon. If it smells sharp or soapy rather than nutty, the coconut oil has turned; discard it.

Frequently asked questions
What is chammanthi podi and how is it eaten?
It is a Kerala dry chutney powder of roasted coconut, chilli, shallot and curry leaf. Most commonly it is mixed into hot rice with a spoon of coconut oil, or eaten alongside kanji. It also goes with idli, dosa and puttu.
Why does chammanthi podi have a shorter shelf life than other powders?
Because roasted coconut carries its own oil, and that oil eventually turns. Four to six weeks is realistic. Spice powders without coconut keep for months; this one does not, and any brand claiming a year has either added preservative or used very little coconut.
How do I know if it has gone off?
Trust your nose. Fresh chammanthi podi smells sweetly nutty. Once the coconut oil oxidises it smells sharp, waxy or faintly soapy. At that point discard it.
How hot is chammanthi podi?
Moderately hot. It is built around roasted coconut rather than chilli, so the heat sits behind the nuttiness rather than leading. We can grind it hotter or milder to order.
Can I use it as a chutney by adding water?
You can loosen it with a little warm water or curd into a thick chutney, though it is traditionally eaten dry with oil. Wet chammanthi is a separate fresh-ground preparation.
Is Kerala Chutney Powder suitable for vegetarians?
Yes. It is made from spices, dal and salt only, with no animal-derived ingredient and no anti-caking agent.
Does Kerala Chutney Powder contain MSG or artificial flavouring?
No. No MSG, no artificial flavour, no colour and no preservative. The flavour comes from roasting the whole spices properly, which is also why it has a shorter shelf life than a supermarket packet.
What makes Kerala Chutney Powder different from a supermarket masala?
It is blended and ground in small batches from whole spices rather than produced in a long factory run and warehoused. There is no filler, no colour and no preservative in it, so it smells of the spices themselves - and it has a shorter useful life than a packet, which is the honest trade-off.
Is Kerala Chutney Powder ground to order?
Yes, in small batches. Ground spice loses its aroma within a few months, so holding large quantities of a finished blend would defeat the point.
