Guntur Chilli Powder — Andhra Heat, Milled to Order

Guntur chilli powder, milled to order from whole Sannam-type pods. This is the chilli that gives Andhra and Telangana cooking its character — several times hotter than Kashmiri, with a clean forward heat rather than a lingering burn.

How we make it

Whole pods from the Guntur belt are sorted, de-stemmed and milled at the counter. How hot the powder turns out depends on how much seed and internal placenta goes into the mill, since that is where the capsaicin sits — we mill to a consistent house ratio, and you can ask for it ground with more or less seed.

What goes in, what stays out

One ingredient: Guntur chilli. No dye, no starch or husk bulking, no anti-caking agent, no spent chilli blended back in. Screened for added colour, with reports published.

How to use it

  • Andhra and Telangana gravies, where the chilli leads
  • Karam podi and gunpowder podis
  • Avakaya and other pickles
  • Blending with Kashmiri or Byadgi to set heat independently of colour
  • Rasam and pepper-chilli preparations

How to store it

Opaque, airtight, cool and dark. Use within three to four months for full aroma. Heat outlasts aroma — an old powder is not milder, it is flatter, which is how people end up over-adding.

Frequently asked questions

What is the difference between Kashmiri chilli and Guntur chilli?

Heat and colour, in opposite proportions. Kashmiri sits around 1,000-2,000 Scoville units with very high colour; Guntur runs roughly 25,000-40,000 with moderate colour. Kashmiri is for redness, Guntur is for heat. Most cooks keep both.

How hot is Guntur chilli powder in practice?

Hot enough that a teaspoon is not interchangeable with a teaspoon of Kashmiri. If you are adapting a recipe written for Kashmiri powder, start with a quarter of the quantity and adjust.

Can you mill it with less seed to make it milder?

Yes. Most of the capsaicin is in the seed and the white placenta, so the ratio milled in decides the heat. Ask at the counter and we will grind it lighter or hotter.

Is Guntur chilli the same as Sannam?

Sannam, usually Sannam S4, is the main variety grown in and around Guntur and is what most Guntur chilli powder is made from. The district name and the variety name get used interchangeably in the trade.

Why does freshly milled chilli powder clump?

Because there is no anti-caking agent in it. Chilli contains natural oil and absorbs humidity, so fresh powder packs together. It is a sign of what is absent, not of a fault. Store it dry and break it up with a spoon.

Does Guntur Chilli Powder expire, and how would I know?

It does not become unsafe so much as it goes flat. Rub a pinch between your fingers and smell it: fresh powder releases aroma at once. If you have to work at it, the volatile oils have gone and it is time to replace it, however good the colour still looks.

Should I keep Guntur Chilli Powder in glass or plastic?

Either, as long as it is airtight and opaque. Light does more damage than the container material. A steel dabba or a tinted jar in a cupboard beats a clear glass jar on the shelf above the hob every time.

Can I keep Guntur Chilli Powder in the fridge?

Better not. Taking a cold jar in and out of a warm kitchen condenses moisture inside it, and damp powder cakes and can grow mould. A cool, dark cupboard is the right place.

What makes Guntur Chilli Powder different from a supermarket packet?

Timing, mostly. A packet was ground in a factory months earlier and has been sitting since. Ours is milled to order from whole spice you can look at first, so the aromatic oils are still in the powder, and nothing is added at any point - no colour, no starch, no anti-caking agent.

Is Guntur Chilli Powder freshly ground, or ground in advance and stored?

Milled to order. Whole spice is kept in store and ground when you buy it or when your order is packed. We do not hold ground stock, which is the whole reason the shop has a mill in the customer area.
