How it is made, in the shop
Whole Gir cow milk is set overnight into curd. The curd, not the cream, is churned by hand until butter separates - that is what bilona describes - and the butter is then simmered until the milk solids settle golden. Broadly 25 to 30 litres of milk make a kilo of ghee, which is what sets the price.
Why people buy it here
A2 ghee is one of the most counterfeited products in the Indian market, and Hyderabad is no exception. Buying it over a counter where you can ask what went into it, from a shop that publishes its batch reports, is a different proposition from buying a sealed jar online.

What makes bilona ghee different from ordinary cow ghee?
Bilona means the butter is churned from set curd rather than from cream. It takes far more milk and more time for the same quantity, and it cannot be done at industrial speed.
Why is A2 ghee so much more expensive in Hyderabad?
Because roughly 25 to 30 litres of whole milk go into a kilo, and Gir cow milk costs more than crossbred milk. Anything priced near ordinary creamery ghee is unlikely to be either A2 or bilona.
Is grainy ghee a sign of poor quality?
The opposite. Graininess comes from slow traditional simmering and correct crystallisation, and it is normal for ghee to set in cool weather and liquefy in Hyderabad summers.
