Sesame oil - nallennai, or nuvvula nune in Telugu - crushed from cleaned whole sesame seed in a wooden press at our Hyderabad counters. Deep amber, strongly nutty, and stable enough to be the traditional pickling and frying oil across the South.
How it is made, in the shop
Sesame seed is cleaned and stone-sorted, then pressed cold. Sesame carries its own antioxidants, sesamol and sesamin, which is why unrefined sesame oil keeps far better than most and why pickles have always been sealed under it. Cloth-filtered, nothing bleached or deodorised.

Avakaya season is the reason this oil moves in Hyderabad. A pickle sealed under fresh nallennai keeps for months without refrigeration, and the oil is doing the preserving as well as the flavouring.

Is gingelly oil the same as the toasted sesame oil used in Asian cooking?
No. Gingelly, til and nallennai all mean plain sesame oil, which is this. Toasted sesame oil is pressed from dark-roasted seed and is a different product - do not substitute one for the other.
Is cold-pressed sesame oil good for avakaya and other Andhra pickles?
It is the traditional choice. Its natural antioxidants slow rancidity, so a pickle sealed under it keeps for months. Buy enough to cover the pickle properly.
