How it is made, in the shop
Mature coconut kernel is sun-dried to about six per cent moisture, then pressed cold in a wooden chekku. Sun-drying rather than kiln-drying matters: kiln smoke taints the oil. No bleaching earth, no steam deodorising, no hydrogenation. It sets solid below about 24C, which is the oil behaving correctly rather than spoiling.
Why people buy it here
Hyderabad has a large Malayali and coastal community who cannot get chekku velichenna easily in the city. This is the same oil, pressed here rather than shipped in a drum.

Why does the coconut oil turn solid in winter?
Coconut oil is mostly saturated fat and sets at around 24C. Solidifying is proof it has not been cut with a cheaper liquid oil. Stand the bottle in warm water to pour.
