Black Pepper — Whole Malabar Peppercorns
Whole black peppercorns from the Malabar coast, cleaned and sorted rather than ground. Pepper is the one spice we would always rather sell whole: the aroma compound that makes pepper smell like pepper starts leaving the moment the corn is cracked.
How we make it
Green peppercorns are harvested, blanched and sun-dried until the skin wrinkles black. We buy whole dried corn, clean it, remove light and hollow corns by density sorting, and pack. The heavier the corn, the more piperine and oil it holds — density sorting is the single most useful quality step in pepper.
What goes in, what stays out
One ingredient: black pepper. No papaya seed — the classic pepper adulterant, similar in size and shape — no light or spent corns bulked in, no mineral oil polish to make the corns shine. Papaya seed floats in water while good pepper sinks, and you can run that test yourself.

How to store it
Whole corns in an airtight jar keep their aroma for a year or more. Ground pepper loses it within weeks. Keep the jar out of sunlight and away from steam — a grinder left above the hob ages its contents quickly.

How can I check whether black pepper has papaya seed mixed in?
Drop a spoonful into a glass of water. Sound, heavy peppercorns sink. Papaya seeds and light, spent corns float. It is the simplest adulteration test there is, and it works.
Why do you sell pepper whole rather than as powder?
Piperine and the volatile oils that give pepper its aroma escape quickly once the corn is broken. Whole pepper keeps for a year or more; ground pepper is noticeably flatter within weeks. Grind what you need.
What does Malabar pepper mean?
It refers to pepper grown along the Malabar coast of Kerala, the traditional and most prized Indian growing region. It is a origin description rather than a variety name.
Is bigger, shinier pepper better?
Bigger and heavier, yes — density correlates with oil and piperine content. Shiny is not a good sign: some corn is polished with oil to look glossy. Good pepper is matt and deeply wrinkled.
Can I get it ground at the counter?
Yes, we will mill it for you, though we would generally suggest buying it whole and grinding at home so the aroma stays in the corn until the moment you use it.
How much longer does whole Black Pepper keep than the ground version?
Roughly four times as long. Whole spice holds its aroma for a year or more because the oils stay sealed inside; once ground, the same spice is noticeably flatter within a few weeks.
Can I toast Black Pepper before grinding, and does that change how long it keeps?
Toasting deepens the flavour and is worth doing just before you grind. It does shorten the life of the spice though, so toast only what you are about to use rather than a whole batch.
